We are delighted to unveil Kushi, our second concept concept gracing the heart of Old Spitalfields Market. Poised to become a cornerstone for aficionados of Japanese comfort food, Kushi promises a unique experience that seamlessly blends tradition with contemporary flair.

Ideation: A Culinary Homage to Japanese Comfort

Our aspiration was to introduce Londoners to the comforting embrace of Japanese cuisine, nestled within the vibrant tapestry of Old Spitalfields Market. This iconic location, steeped in history and pulsating with energy, served as the perfect canvas for our vision. Kushi embodies the desire to offer a glimpse into Japanese culture, expressed through a lens of casual yet sophisticated dining.

The Product: Unveiling the Allure of Katsu

Kushi revolves around the revered comfort food – Katsu. Deep-rooted in the Meiji era (1868-1912), Katsu encompasses meat or veg enveloped in a golden panko crumb coat, achieved through the art of deep-frying. Traditionally savored in casual eateries known as "Katsuyasy’’ or  in ‘’Izakayas’’, this dish tantalizes the palate with its symphony of textures and flavors. At Kushi, we pay homage to this legacy while incorporating our own culinary touches. Our meticulously curated a menu that boasts a diverse array of Katsu options, ranging from the iconic pork cutlet to more adventurous creations like the guy (steak) katsu or an array of signature sides, deserts and veggie/vegan options. 

The Masterminds Behind the Magic

The driving force behind Kushi is a team fueled by culinary passion. Alongside Group Executive Chef Joni Francisco, who needs no introduction, Gustavo Tavares, previously the head chef at Koya London, harbors a deep-seated love for Japanese cuisine. His numerous journeys to Japan ignited his desire to share the country's authentic flavors and the vibrant "Izakaya" culture. Collaborating with our Joni, Gustavo has meticulously crafted a menu that embodies the true essence of Japanese comfort food.
